Ingredients
Group 1:
175g strong flour
175g plain flour
400ml warm Lewis Road Creamery Milk (40 degrees)
22g fresh yeast
Group 2:
400mls warm water
4g bicarb soda
10g salt
Lewis Road Creamery Butter (for cooking)
Method
1. Mix all ingredients in first group and prove until batter doubles in size.
2. Then add second ground of ingredients to batter 5 mins before cooking.
3. Combine gently.
4. Add clarified butter into a medium hot frying pan & ladle the crumpet pancakes into pan. When Golden brown on the bottom, flip the crumpet and cook on the other side for 30 sec or place in a 170-degree oven to set the top.
5. Top with a healthy dollop of Lewis Road Creamery’s new Chocolate Butter and other yummy toppings such as freeze-dried raspberries, macadamia snow and crunchy almonds – whatever you like.
