Ingredients


Pastry:

1 1/3 cups all-purpose flour (plus extra for bench surface)

1/4 cup sugar (plus extra for sprinkling)

1 1/2 teaspoons baking powder

1/2 teaspoons salt

5 tablespoons chilled Lewis Road Creamery Premium Unsalted Butter, cut into 1/2" cubes

1/2 cup chilled Lewis Road Creamery Non-Homogenised milk (plus extra for brushing)

 

Filling:

1/4 cup Elderflower cordial

2 apples (peeled/sliced)

4 cups mixed berries (blackberries, blueberries, raspberries)

2 tablespoons icing sugar (add too taste if you want sweeter!)

Juice of 1/2 a lemon

Method


In a saucepan, bring all filling ingredients to a simmer until fruit starts to soften and a syrup starts to form. Pour into baking dish covering the bottom of the dish.

Whisk 1 1/3 cups flour, 1/4 cup sugar, baking powder, and salt in a medium bowl. Add butter; using fingertips, rub in butter until coarse meal forms. Add 1/2 cup milk and stir until dough just forms. Gather dough into a ball and transfer to a lightly floured surface. Gently knead 5 or 6 times, then pat or roll dough into a ball. Tear off individuals sections and press into fruit. Brush tops lightly with milk and sprinkle with sugar.

Bake until fruit is bubbling and pastry is just cooked through and golden all over, about 35 minutes. Let cool at least 30 minutes; serve with creamy Lewis Road Creamery Premium Vanilla Ice Cream!
