Ingredients


150g Lewis Road Creamery Premium Unsalted Butter

6 tablespoons Golden Syrup

3 1/2 cups flour

1 teaspoon baking soda

1 tablespoon ground ginger

1 1/4 cups White Sugar

1 egg, beaten

Method


Preheat oven to 180°C.

Measure butter & Golden Syrup into a saucepan. Heat until almost boiling. Remove from heat. Sift flour, baking soda & ginger into large mixing bowl & stir in sugar. Make a well in the centre, pour in the beaten egg, then the melted butter and syrup, mix to combine. Put aside to cool.

Form into walnut sized balls. Gently press balls flat with a fork, place on cold, lightly greased oven trays. Allow room for a little spreading. Bake for approximately 15–20 minutes until biscuits are a deep golden brown colour.
